Abstract: The evergreen tree Pimenta dioica provides the culinary spice pimento or allspice of commerce. The dried, mature but not ripe, berries arc the spice of commerce. Pimento is also sold as ground spice. The extraction and chemical composition of other commercially important products obtained from the spice, like berry oil , leaf oil and oleoresin, are detailed. Cultivation. propagation and post-harvest processing are reviewed in the chapter. The use of allspice in food , medicine and perfumery and the functional properties are also described. Cleanliness, safety issues and trade specifications arc also enumerated in the chapter.
