(6), (8) and (10) gingerols and (6), (8) and (10) – shogaols are the pungent principles present in ginger oleoresin. Wide variability was noticed in the ginger germplasm. Accessions with high oleoresin, gingerol and shogaol are 2,22,42,60,86,141 and 197.en_US
